8 ounces noodles (macoroni, twists or shells)
2 ounces plus 1 Tablespoon canola oil
1/2 tomato, chopped
1/4 cup olives, chopped
1/2 bell pepper, chopped
2 ounces grated Parmesan cheese
1 ounce vinegar
2 boiled eggs, 1 yolk discarded
Preparation:
Cook noodles according to directions on package. Drain, toss with
1 Tablespoon canola oil and chill. Combine remaining ingredients
in a large mixing bowl.
Stir well with large spoon, toss in pasta and serve.
